There were a few staff busy making Xiao Long Bao, a kind of dumpling.
One was kneading the dough.
One was rolling the dough into a long roll and cutting them up into small pieces and weighing them.
One was flattening the small pieces into a round thin skin.
One was scrapping filling on to the skin and weighing each of them before passing it to another guy who nipped them into beautiful buns.
A father came by and let his two daughters about one and a half and four year old sat on the ledge watching the kitchen staff at work.
He said to his elder daughter, "You see each of them are doing a different thing. One is rolling the skin. One is putting the ingredient. And one is making it into a bun. This is call specialization.
